Air Fryer Artichoke (Low Carb)

My air fryer artichoke appetizer is amazingly low net carb and is perfect for any celebration. Simple pantry friendly ingredients and your air fryer is all you need to make this fabulous dish!

Ingredients Needed in our Recipe

Artichoke Hearts (canned).

While many folks will frown that I use canned artichoke hearts, I follow the same rule as when buying frozen vegetables. Do a quick check of the ingredients on the label to make sure nothing extra has been added.

Eggs or Egg Whites.

Tips on buying eggs.

When buying eggs, be sure to open the container to make sure all the eggs are intact. Check the date on the label to make sure the eggs are not expired.

Storage.

Eggs should always be stored in the refrigerator.

How long will eggs last?

As long as eggs are refrigerated, they will last four to five weeks beyond the packed date.

Almond Flour.

Storage.

Store almond flour in a tightly sealed container. Almond flour should be stored in the refrigerator or freezer.

How long will almond flour last?

One year.

Grated Parmesan Cheese.

Salt (or seasoning of choice).

I love to use Redmond Real Salt, but I invite you to use your favorite seasoning in this recipe.

Non-Stick Cooking Spray.

Since this is an Air Fryer recipe, I highly recommend using avocado oil spray OR extra virgin olive oil.

How to Make Air Fryer Artichoke

Spray Air Fryer basket with non-stick cooking spray. 

Pour egg or egg whites in a bowl. If using egg, whisk egg.

Drain artichoke hearts. Using a paper towel, pat dry.

In a separate shallow bowl, combine almond flour, Parmesan cheese, and salt (or seasoning of choice)

Dip artichoke in egg mixture, then almond flour mixture, and line coated artichoke hearts in the Air Fryer. 

Repeat until the Air Fryer basket is filled. 

Spray artichoke with non-stick cooking spray.

Air crisp (or air fry) at 360 degrees for 7 minutes. 

Open basket. Using tongs, flip artichoke. Air crisp (or air fry) for an additional 7-10 minutes.

What Air Fryer Did You Use?

I used a Ninja Foodi Programmable 10-in-1 5qt Pressure Cooker and Air Fryer.

I don’t own a Ninja Foodi? Can I use any other Air Fryer in this Recipe?

Yes! This recipe will work in all Air Fryers. Follow the exact directions and you will be thrilled with the results.

How to Store Leftovers?

Leftovers? You probably won’t have any! I am super serious! This is a great appetizer. But if you have leftovers, store in a tightly sealed container in the refrigerator.

Can I Freeze this Recipe?

Technically, you can freeze any recipe, but personally, I would not. If you freeze, be sure to use a proper freezer bag. It should last 2-3 months.

How Long Does it Take to Reheat?

Since our air fryer artichoke is a ‘breaded’ recipe, I would place it back in the air fryer OR Ninja foodi at 360 for 3-5 minutes to ‘re-crisp.’ 

What Can I Do with Leftovers?

Eat them as is!!!!!

FAQ.

Carbs in artichoke?

Many individuals panic over artichoke. While the carbs may seem a little high (14 grams of carbs in 1 medium artichoke), please remember the fiber in artichoke is 10 grams. Since this is an appetizer, I don’t see you eating an entire artichoke!

Is artichoke keto?

Artichoke is a little tricky. Artichoke is a vegetable that is VERY high in fiber. 1 medium artichoke is 14 grams of carbs. DO NOT PANIC! This high fiber vegetable has 10 grams of fiber. Net carbs equals 4 grams.

Is almond flour keto?

Almond flour is a popular keto flour and is made from crushed almonds. Per 2 tablespoons, almond flour contains 3 grams of carbs and 1 gram of fiber. While many like to use almond flour in baking, it can also be used as a breading. 

Can diabetics have almond flour?

Yes! With its low carb count, almond flour is fantastic for diabetics. You can replace the flour in your breading (or any recipe) by using a 1 to 1 ratio. Since almond flour does have some fat, I cut the fat in the recipe by half.

I am allergic to almond flour, can I use pork rinds or coconut flour?

Sure!

Can I make Air Fryer Artichoke in the Ninja Foodi?

Yes!

This recipe seems a little bland. Can I add other seasonings?

Yes and yes! Please remember, I give you all a base recipe. Please please feel free to use your FAVORITE seasonings and spices.
